Atul, the visionary owner and founder of Elaichii, boasts an impressive career in the food industry that spans over 15 years. His journey began at The Oberoi in New Delhi, one of India’s most prestigious hotel chains, where he honed his culinary skills and developed a deep appreciation for fine dining. Working in such a renowned establishment provided him with a strong foundation in hospitality and an exposure to the intricacies of high-quality food preparation.
After establishing a solid base in India, Atul's culinary adventures took him to Dubai, where he experienced the vibrant and diverse gastronomic scene of the Middle East. Here, he refined his techniques and broadened his palate, gaining insights into fusion cuisines that merge traditional Indian flavors with global influences. His time in Dubai allowed him to explore the art of melding spices and creating innovative dishes that resonate with a multicultural audience.
Atul’s next chapter unfolded in the Caribbean, where he continued to elevate his culinary repertoire. The experience of working in such a unique locale taught him the importance of local ingredients and seasonal flavors, which further enriched his understanding of how to create authentic Indian cuisine.
Finally, making his way to America, Atul discovered an exciting landscape for Indian food that was both challenging and rewarding. Here, he worked in some of the top-notch Indian restaurants, immersing himself in a culinary scene that was still evolving. He recognized the need to introduce diners to the true essence of Indian cuisine, which is often overshadowed by misconceptions and stereotypes.
Growing up in the bustling streets of Delhi, Atul Kumar developed an innate understanding and appreciation for the authentic flavors of Indian cuisine. The vibrant street food culture and rich culinary heritage of Delhi shaped his palate and provided inspiration for his future culinary endeavors. His background allows him to intimately grasp the complexity of Indian spices, the significance of regional variations, and the cultural narratives that accompany traditional dishes.

Vikas's culinary journey exemplifies his dedication and versatility in the kitchen. He began his education at a culinary school in Dehradun, India, where he laid a solid foundation for his skills. His career took off at Marriott Hotel & Resorts, where he worked in various cities, including Jaipur and Bangalore, honing his techniques in both casual and fine dining settings.
As he advanced in his career, Vikas explored diverse cooking techniques and cuisines, significantly broadening his extensive food knowledge. His travels included a significant stint in the Caribbean, where he immersed himself in the vibrant flavors and cooking styles of islands like St. Kitts & Nevis, Barbados, and Aruba. He has led various restaurant concepts, including high-end steakhouses and fine-dining Caribbean seafood restaurants, mastering different cuisines along the way.
Eventually, Vikas relocated to the United States, where he took on the challenge of leading Ammoora in Baltimore. There, he elevated the local food culture through his refined culinary skills in progressive Middle Eastern and Mediterranean cuisine. His leadership and expertise were pivotal in propelling the restaurant into the spotlight, earning it a coveted position on the New York Times' list of top 50 restaurants.
Recently, after moving to New York, Chef Vikas embraced his deep love and passion for Indian cuisine—his roots. He joined ELAICHII, a modern and innovative Indian restaurant in Valley Cottage, Rockland County, NY. Here, he offers a creative menu with a unique take on traditional Indian dishes from various regions. This restaurant reflects his diverse culinary background and commitment to delivering high-quality, innovative dishes that celebrate the rich flavors of the cuisines he has mastered. Chef Vikas continues to push culinary boundaries, creating memorable dining experiences for his guests.
